Lemon Honey Goat Cheese Pound Cake
2 cups flour
1 ¼ cup sugar
2 tsp baking powder
½ tsp kosher salt
3 eggs, room temp
3/4 cup olive oil
1/2 cup milk
3 Tbsp lemon juice
1 Tbsp grated lemon zest
1 Tsp vanilla
4 oz Celebrity Honey Goat Cheese, softened
3 Tbsp honey
Spray 9×5 loaf pan with cooking spray and dust with flour; set aside.
In mixing bowl combine flour, sugar, baking powder, and salt. Add eggs, oil, milk, lemon zest, and vanilla. With the mixer on low speed, beat just until all the flour is incorporated.
In a small bowl whisk together honey goat cheese and honey until smooth.
Pour one-third of the pound cake batter into prepared pan. Spoon one-third of the goat cheese over top and twist through the batter to obtain a marble effect. Repeat with the remaining two layers.
Bake in 350F oven for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on rack 15 minutes; remove from pan.
Serve with a light dusting of powdered sugar, and crumbled Honey Goat Cheese before serving
