Mini Chocolate Cherry Tarts

Makes 6 servings
1 14.5 ounce can tart cherries in juice, drained
2 tablespoons Amaretto or Frangelico
1 tablespoon sugar
1 package mini graham cracker pie crusts (6 crusts)
1 4.5 ounce package Celebrity Chocolate Cherry Goat Cheese, sliced into 6 rounds
Preheat oven to 350°F. Combine cherries, Amaretto and sugar. Let stand 10 minutes.
Spoon cherries evenly into piecrusts. Place one Goat Cheese round on each piecrust. Arrange pies on baking sheet and bake 8 minute or until cheese is just melted. Serve with whipped cream, if desired.
