Herbed Goat Cheese Veggie Flatbread

Makes 8 servings
1 sheet puff pastry, thawed
1 zucchini, thinly sliced
1 red bell pepper, sliced
2 plum tomatoes, thinly sliced
1 small red onion, thinly sliced
1 tablespoon olive oil
1 tablespoon balsamic vinegar
½ teaspoon salt
1 4.5 ounce package Celebrity Garlic & Fine Herbs Goat Cheese, crumbled
Preheat oven to 400°F. Unfold pastry sheet and roll into 10 by 14 rectangle. Arrange on baking sheet. Arrange vegetables evenly over pastry. Combine oil, vinegar and salt and brush over vegetables.
Bake 15 minutes or until pastry is golden brown and vegetables are tender. Sprinkle with cheese and bake 2 minutes or until Goat Cheese is melted.
