Individual Tiramisu with Cappuccino Goat Cheese
8 lady fingers
½ cup espresso
2 egg yolks
1/3 cup sugar
½ cup heavy cream, plus 2 Tbsp
4 oz cappuccino Celebrity goat cheese, softened
Place ladyfingers in a shallow dish and pour espresso over evenly. Allow to soak while you make the goat cheese filling.
Place egg yolks, sugar, and 2 Tbsp of heavy cream in saucepan and whisk together. Increase heat to medium and whisk constantly until sugar is dissolved and the custard is a thick consistency. Remove from heat and allow to cool completely.
In a separate bowl beat the remaining heavy cream until stiff peaks form.
Once the custard has cooled mix in the cappuccino goat cheese and whisk together until well combined and smooth. Gently fold in whipped cream.
Assemble tiramisu by placing ½ lady finger in the bottom of each glass serving dish. Spoon or pipe a later of filling over each lady finger. Repeat 3 more times or until you reach the top of the dish.
Refrigerate for at least 2 hours before serving.
